Bäckerhügel opened in September 2025, founded by owner Shinkichi Koyama with a vision to bring "authentic flavors not found in the neighborhood." Every loaf is crafted with an unwavering commitment to natural yeast, whole-grain flour, and butter — nothing else. The moment you open the door, a warm, toasty aroma fills the air, and the cozy, family-run atmosphere wraps around you. The shop is located along Shinagawa-dori, within walking distance of Chōfu Station. The name "Bäckerhügel" means "baker's hill" in German — a nod to the owner's own name and his love of the outdoors. The exterior makes a striking impression with its deep red base and charming white lettering.
Inside, there's also an eat-in space available. Owner Koyama, who honed his skills at places such as Trasparente Nakameguro, is working alongside his parents to build a shop deeply rooted in the local community.
