【Kumamoto Gourmet】Sells Out Before Noon! The "Shio-Pan" (Salt Bread) at Seaside Bakery "Amakusa Shio-Pan Labo" Is Absolutely Delicious

■The Carefully Crafted "Shio-Pan" Made with Natural Salt from Tsūjishima Island, Amakusa

True to its name, the only thing on the shelves here is shio-pan.

The natural salt used in the bread comes from Tsūjishima Island in Amakusa, produced by boiling seawater in a kettle for about a week. It has a mellow, subtly sweet character. This salt is kneaded into the dough, butter is folded inside, and then coarse salt is sprinkled on top before baking.

Take one bite and the surface gives a satisfying, fragrant crunch, while butter slowly spreads from within.

"Since we opened, every single one has been made by hand," staff member Kana Kozono told me with a smile. "I just can't get enough of the smell of freshly baked bread and the aroma of the melting butter," she said, and her words made her deep love for shio-pan come through loud and clear.

When the shop first opened, they only sold the plain shio-pan (¥151), but now they also offer a range of creative variations built on that same foundation.

Among them, the "Shio-Pan Blueberry Cheese" (¥388) — filled with blueberry jam made from berries grown on the bakery's own farm, along with cream cheese — is a seasonal limited-edition treat that you absolutely have to try at least once.

The bakery doesn't have its own café space, but you can eat your purchases out on the terrace and other areas around the complex. The recommended experience is grabbing a drink from the coffee stand and enjoying your fresh-baked bread while looking out over the sea.

It's also a nice bonus that the restaurant inside the complex serves shio-pan (plain variety only) as part of its menu. On busy days they bake as many as 3,000 pieces, yet they still sell out before noon — that's how popular this place is. It's a perfect stop on an Amakusa trip, of course, but honestly it's the kind of special spot that makes you want to make the drive all the way from Kumamoto City just for the bread.
