Lately, the response from pop-up events has been enormous, keeping him on the road all over Japan. On top of that, he runs the shop solo, so both dine-in and takeout orders are handled on a web-reservation-priority basis, with only a limited number of customers accommodated per session.

The eggs are "Taiyo Tamago" (Sun Eggs) sourced from a contract farm in Unzen, Nagasaki Prefecture — renowned for their ultra-rich yolks so thick a toothpick can stand upright in them for hours. A generous 5 eggs are used per omelet.
